Jo's Apple and Coconut Protein Cookies

Simple, healthy and tasty

INGREDIENTS:

· 2 ripe bananas, mashed

· 1 teaspoon cinnamon

· 1 teaspoon nutmeg

· 1/4 cup protein powder (or milk powder)

· 2 cups rolled oats

· 1/4 cup desiccated coconut

· 1 apple, finely chopped

· 1/4 cup olive oil

· Sweetener of your choice - maple syrup, honey or a few drops of liquid stevia, until desired sweetness is reached

· 1 teaspoon vanilla extract

· Pinch sea salt


METHOD:

· Preheat oven to 180°C

· Combine all wet ingredients and mix well

· Add oats, coconut, apple, protein powder, cinnamon, nutmeg and salt

· Mix together and allow to sit for 5 minutes

· Form into 10-12 small cookies

· Bake for approximately 30 minutes or until golden brown
