Elizabeth's Carrot Cake Balls
Naturist Elizabeth from South Africa shares her healthy carrot cake balls recipe

Ingredients
2 med carrots
1 cup gluten free oats
1 cup dates pitted
1/2 cup nuts of your choice
1/2 cup coconut
1 tsp vanilla essence
Extra coconut to roll balls in
Method
Put oats in food processor, process until flour, add rest of ingredients, process until dough forms. Make in balls and roll in extra coconut. Can be kept in fridge for a week or two.
